Microgreen Salad with Watermelon & Feta

The farmer's market is not only a great place to eat local; it is also a great place to support your local farmers and ranchers. During the spring and summer months, I am lucky to have a large selection of options when it comes to dressing up my salads. My Microgreen Salad with Watermelon and Feta is a great way to combine non-traditional flavors in a simplistic dish.
Microgreen Salad with Watermelon & Feta
Ingredients
- 3 cups assorted microgreens
- 1 cup cubed watermelon
- 1/4 cup feta
- 1 carrot (thinly sliced)
- 1 shallot (thinly sliced)
- 3 tbs lemon juice
- 4 tbs olive oil
- 1 1/2 tsp Dijon mustard
- 1 garlic clove (finely minced)
- 1/2 tsp salt
- 1 pinch black pepper
Directions
- Combine lemon juice, olive oil, Dijon mustard, garlic, salt, and black pepper to a blender; blend until smooth.
- Toss microgreens, watermelon, feta, carrot, and shallot in a large bowl. Drizzle with dressing.
