Microgreen Salad with Watermelon & Feta

The farmer's market is not only a great place to eat local; it is also a great place to support your local farmers and ranchers. During the spring and summer months, I am lucky to have a large selection of options when it comes to dressing up my salads. My Microgreen Salad with Watermelon and Feta is a great way to combine non-traditional flavors in a simplistic dish.


Microgreen Salad with Watermelon & Feta

Ingredients 
  • 3 cups assorted microgreens 
  • 1 cup cubed watermelon
  • 1/4 cup feta
  • 1 carrot (thinly sliced)
  • 1 shallot (thinly sliced)
  • 3 tbs lemon juice
  • 4 tbs olive oil
  • 1 1/2 tsp Dijon mustard
  • 1 garlic clove (finely minced)
  • 1/2 tsp salt
  • 1 pinch black pepper
Directions
  1. Combine lemon juice, olive oil, Dijon mustard, garlic, salt, and black pepper to a blender; blend until smooth.
  2. Toss microgreens, watermelon, feta, carrot, and shallot in a large bowl. Drizzle with dressing.
