Fluffy Blondies with Chocolate Chunks

Blondies, also known as Blonde Brownies, is a simple recipe composing mainly of brown sugar and butter. Similar in texture to its chocolate counterpart, the decadent brownie, Blondies are unique as they are made with no chocolate powder. This delicious desert can be a base for adding various chocolate chips and chunks for a fun twist, served with soften ice cream or just eaten plain.

Fluffy Blondies with Chocolate Chunks

Recipe makes 15 serving. Total time 30 minutes (Prep: 10 minutes/ Cook: 20 minutes). 

Special Cookware: 9x13 pan 

Ingredients 

  • 2 cups unbleached flour
  • 2 large eggs
  • 2 tbs vanilla
  • 2 tsp baking powder
  • 1 cup unsalted butter (melted)
  • 1-1/4 cup light brown sugar
  • 1/2 tsp kosher salt
  • 1/2 cup chocolate chips (optional)

Directions

  1. Preheat oven to 350°F.
  2. Line a 9x13 pan with parchment paper fitted to the bottom of the pan (spray the pan with non-stick cooking spray prior to lining it with parchment. This will allow the parchment to stick to the bottom). Set the pan aside.
  3. In a large mixing bowl, combine the unsalted butter, brown sugar, eggs, and vanilla. Mix thoroughly.
  4. Add in the salt, baking powder, and unbleached flour to the wet mixture. Mix until just combined.
  5. Pour the batter into the prepped 9x13 pan. With the back of a spatula, spread the mixture to cover bottom of the pan. Optional: Add any topping that you would like.
  6. Bake for 20 minutes or until the top of the blondies are slightly golden brown.
  7. Remove from the oven and let stand, until the blondies are cool to the touch.
  8. Cut into 15 equal pieces and enjoy!
