Palazzolo's Prosciutto e Melone

Towards the end of summer, I love hosting BBQs with my friends. This year, I had asked my very good friend to bless us with some Italian dishes, and without hesitation, he presented prosciutto e melone. The sweet melon juxtaposed with the salty prosciutto were flavors that I had never thought to combine. This recipe is great as a starter or a midday snack. Sweet and refreshing, prosciutto e melone is a dish that should be at your next dinner party!
Palazzolo's Prosciutto e Melone
Recipe makes 4 serving. Total time 15 minutes (Prep: 5 minutes/ Cook: 10 minutes).
Ingredients
- 1/2 cantaloupe
- 1 tbs white balsamic vinegar
- 4 slices prosciutto
- 4 oz. fresh mozzarella
- 1/2 tbs basil (torn)
Directions
- Cut a whole cantaloupe length wise down the middle creating two melon halves. Hold the halved cantaloupe in the palm of your hand over the garbage and remove the seeds with a spoon. Once the melon half is cleaned, place the melon on a cutting board flesh side up. Cut the melon half into 8 equal segments (the width of the segments depends on the size of the melon). Once the melon is segmented, place the melon on a serving tray.
- Slice or tear the prosciutto into bit sized pieces and place them on top of the melon segments.
- Repeat step #2 for the mozzarella.
- Drizzle the melon, prosciutto, and mozzarella with white balsamic.
- Garnish with basil.
