Sautéed Mushroom Crostini with Chive Goat Cheese

Recipe makes 12 servings. Total time 33 minutes (Prep: 15 minutes/ Cook Time: 18 minutes).

Ingredients

  • 1 loaf Sourdough French Bread (sliced into 1-inch pieces)
Mushrooms
  • 2 Tbsp Olive Oil
  • 2 Tbsp Salted Butter
  • 1 Shallot (finely Chopped)
  • 1.5-2 lbs Baby Portobella Mushroom, White Button Mushrooms, or a combination of both (cleaned and sliced)
  • 1 tsp Kosher Salt
  • .5 tsp Fresh Black Pepper
  • 1 Tbsp Garlic (minced)
  • 1/4-Cup dry White Wine
  • Two Sprigs or 1 tsp of Thyme (chopped)
Goat Cheese Spread
  • 8-12 oz Plain Goat Cheese
  • 2 Tbs Finely Chopped Chives

Directions

  1. Preheat your oven to 350°F. Arrange the sliced sourdough bread on a wire rack and place it in the oven. Toast the bread until it reaches your desired level of crispness.
  2. Heat a medium to large cast iron skillet over medium-high heat and add the olive oil and butter. Once the butter has melted, add the shallot, mushrooms, salt, and pepper. Sauté, stirring occasionally, until the mushrooms are browned and their liquid has fully evaporated.
  3. Add the garlic and thyme; sauté until fragrant (30-seconds to 1-minute)
  4. Add white wine and reduce the heat to low (2-minutes). Remove the mushrooms from the heat.
  5. In a medium mixing bowl, combine the goat cheese and chives. Mix thoroughly until the chives are evenly distributed throughout the goat cheese.
  6. Spread goat cheese on the toasted sourdough slice. Pile on the mushrooms.
Optional: sprinkle with additional chives and/or add microgreens to the top for a pop of color!

Hūlō! (Cheers!)
